I also knew that one pot on the stove wouldn\u2019t keep up with the task.<\/p>\n<p>I considered my options:<\/p>\n<ul>\n<li style=\"\">I couldn\u2019t do one pot at a time because I didn\u2019t have enough freezer space to keep the waiting fat frozen that long.<\/li>\n<li style=\"\">I did not want to stink up the house for weeks with the cooking meat smell (which isn\u2019t so bad if you\u2019re doing a small amount).<\/li>\n<li style=\"\">And, I didn\u2019t want to heat up the house during the hot summer months.<\/li>\n<\/ul>\n<p>The answer?<\/p>\n<p>I took all my crockpots and a roaster oven outside. I set up a table on the front porch, and voila, I had an outside kitchen.<\/p>\n<p>I melted batches of beef fat into tallow for a solid week.<\/p>\n<p>And it worked great:<\/p>\n<ul>\n<li style=\"\">no smell or extra heat in the house, and<\/li>\n<li style=\"\">I kept the tallow batches going day and night<\/li>\n<\/ul>\n<p>Then I had a lightbulb moment:<\/p>\n<p>Why not do most of my cooking outside during the summer?<\/p>\n<p>And since then, I have.<\/p>\n<p>Each summer, I do more and more cooking outside. I\u2019ve learned and grown and added fun equipment to my collection.<\/p>\n<p>And I keep going because it\u2019s exciting and freeing to see that you really can cook amazing, satisfying meals outside.<\/p>\n<p>Hi, my name is Wardee Harmon.<\/p>\n<p>And I\u2019m the author of the <em>Complete Idiot\u2019s Guide to Fermenting Foods<\/em>.
