It was grown by farmers 5,000 years ago. And it has quickly found a permanent home in my family\u2019s kitchen.<\/span><\/p>\n<p style=\"line-height: 27px;\"><span style=\"color: rgb(0, 0, 0);\">Why?<\/span><\/p>\n<p style=\"line-height: 27px;\"><span style=\"color: rgb(0, 0, 0);\">Because it has a gentler, older form of gluten that is closest to what God originally intended for us to eat. Most people digest it better than modern wheat. And many people find that it doesn\u2019t trigger their seasonal allergies like modern wheat can.<\/span><\/p>\n<h2>The Overwhelming Evidence For Giving Einkorn A Try<\/h2>\n<p>There are some other great things about einkorn, too:<\/p>\n<ul>\n<li>Einkorn\u2019s starch goes into your blood more slowly, so it <span>won\u2019t spike your blood sugar<\/span> like other grains.<\/li>\n<li>It contains half the phytic acid of modern wheat. That means it <span>won\u2019t block mineral absorption in your body&nbsp;<\/span><span>or cause mineral deficiencies<\/span>.&nbsp;(And when you soak, sprout or sour your dough, phytic acid is reduced even more, so you\u2019re way ahead of the game in eliminating mineral deficiencies.)<\/li>\n<li style=\"\">Einkorn contains the oldest (and gentler) form of gluten. So you get <span>beautiful loaves without the tummy troubles<\/span> of modern wheat.<\/li>\n<li>It is a \u201chulled\u201d wheat, that makes it&nbsp;<span>ideal for growing organically<\/span>. That means you don\u2019t have to worry about stray chemical contamination and insects.<\/li>\n<\/ul>\n<p style=\"line-height: 27px;\">Well, that was more than enough to get me interested in baking with einkorn so I gave it a whirl. Literally.<\/p>\n<h2>I Put It All In A Blender And Gave It A Whirl<\/h2>\n<p><span><img decoding=\"async\" alt=\"\" src=\"https:\/\/lp.traditionalcookingschool.com\/wp-content\/uploads\/2016\/08\/einkorn-flour-sifting-Traditional-Cooking-School-GNOWFGLINS.jpg\" style=\"padding-bottom: 0px !important;\" loading=\"lazy\" width=\"447\" height=\"298\"><\/span><\/p>\n<p data-unit=\"px\" style=\"line-height: 27px;\">And while I was excited about helping my family enjoy the health benefits of fresh-ground flour, my biggest joy came from feeling more connected to my family heritage.<\/p>\n<p style=\"line-height: 27px;\">This is where my grandmother comes into the story:<\/p>\n<p style=\"line-height: 27px;\">I grew up hearing my Dad\u2019s stories about my Tata Wardeh. (She\u2019s his mother and my grandmother.)<\/p>\n<p style=\"line-height: 27px;\">In their village in Israel, all the families shared a common mill, and each mother would go there to mill enough whole wheat flour to bake pocket bread for the week.<\/p>\n<p style=\"line-height: 27px;\">So when I milled my own flour \u2014even though it wasn\u2019t on the village stone mill \u2014 I felt connected to how things used to be and oh-so-excited to bring that experience into our modern-day family.<\/p>\n<p style=\"line-height: 27px;\">And we haven\u2019t looked back!
